From this morning’s walk ...
At this time of the year you see PRICKLY PEARS everywhere! We love prickly pears so we decided to take on what mother nature is providing. So beautiful to be able to get your own fruit / veg instead of going through the supply chain ... also, why don’t we ever see Maltese prickly pears in shops when we have this abundance ?? 🤷🏽♀️
This fruit is packed with health-boosting nutrients such as Vitamins C, E, K, Potassium, Magnesium, Calcium & Phosphorus ... but hey, be careful as they also say that if you overdo it, it can lead to constipation! 💩 💩 💩
Did you know that you can also eat the cactus leave ?? It’s a very popular dish in Mexico. You can either steam it, roast it or fry it. Very popular in veggy tacos 🌮 Check it out ... curious enough to try it out? Or you’re not so adventurous ? 😆
Apart from enjoying this summer fruit as it is, we have also made this quick and easy Prickly Pear Lemonade. All you need for 1 cup is:
✅ 3 prickly pears
✅ juice of half a lemon
✅ agave syrup for some sweetness
✅ ice cubes
We bet it would be super nice if you substitute the lemon with an orange & add a little bit of mint leaves 💚
